Hej, oj nu börjar det bli många granolarecept här på bloggen, men det kan inte bli för många eller hur? Här kommer ett som kommer via Johanna Bradford där hon delar med sig av Fredrik Bille Brahes recept från hans . café Atelier September i Köpenhamn. Detta är en supergod granola då själva vätskan är en kombination av olivolja och honung. Men också att de lagar en jättegod zucchinisylt till. Ovanlig kombination, javisst! Men just därför så god!
Jag hade med mig denna granola till min vän Beatrice i Paris när vi var där i somras (för den resan har du väl hört talas om här på bloggen eller hur? haha), och nu får du den här, min kära vän Beatrice!!
Granolan:
150g Hasselnötter (jag byter ut hasselnötterna med en blandning av andra nötter såsom cashewnötter, valnötter mm då jag är allergisk mot hasselnötter)
150g Mandlar
140g Pumpakärnor
140g Solroskärnor
140g Sesamfrön
400g Havregryn (här byter jag ut hälften mot blötlagt bovete då min mage är känslig mot havregryn, och det blir lite nyttligare.
9g Salt
125g Olivolja
250g Honung
1 Vaniljstång
Blanda alla torra ingredienser i en stor bunke. Dela på vaniljstången och skrapa ur kärnorna och lägg i både kärnor och stång tillsammans med olivolja och honung i en stor kastrull. Koka ihop det ordentligt. Det ska bubbla upp och expandera 2 till 3 gånger. Blanda ner i de torra ingredienserna och rör om så att allt blandas.
Lägg på en bakpappersklädd plåt (obs viktigt då honungen torkar den den svalnar och fastnar lätt i pannan). Lägg granolan i ett ganska tjockt lager och sätt in i ugnen på 150-170 grader, rör om var tionde minut tills den är guldbrun och fin. Det tar ca 50 minuter.
Zucchinisylt:
500g Zucchini
400g Socker
20g Ingefära
3st lime (zest från 1,5 och juicen från alla 3)
1 vaniljstång
Börja med att skära zucchinin tunt med mandolin, skär tunna stavar av ingefäran och skrapa ur fröna ur vaniljstången och blanda den ordentligt med en del av sockret. Blanda alla ingredienser och riv ner lime samt pressa över juicen, och rör om igen.
Låt zucchinin få vila några timmar. Den ska släppa ifrån sig nästintill all vätska och sockret ska ha smält samman helt. Häll ner zucchiniröran i en kastrull och koka på hög värme i 5-10 minuter.
Ta sedan ut zucchinin och lägg i ett durkslag medan vätskan får koka ytterligare 5 - 10 minuter beroende på värme. Vätskan ska reducera till en lagom tjock sirap. När vätskan fått rätt konsistens stängs plattan av och lägg tillbaka zucchinin så att allt får svalna tillsammans i 30 minuter.
Sen lägger du över sylten i en burk och förvarar i kylen.

Hello, wow there are starting to be quite a few granola recipes on the blog now—but you can never have too many, right? Here’s one I got via Johanna Bradford, who shares a recipe from Fredrik Bille Brahes and his café, Atelier September in Copenhagen. It’s a delicious granola, mainly because the liquid component is a blend of olive oil and honey, but also because it’s served with a fantastic zucchini jam. An unusual combination? Sure! But that’s exactly what makes it so good.
I brought this granola along to my friend Beatrice in Paris when we visited last summer (you’ve heard about that trip on the blog, right? haha), and so this is for you, my dear friend Beatrice!
The Granola:
150g Hazelnuts (I substitute the hazelnuts with a mix of other nuts, such as cashews and walnuts, as I am allergic to hazelnuts)
150g Almonds
140g Pumpkin seeds
140g Sunflower seeds
140g Sesame seeds
400g Rolled oats (I replace half of this with soaked buckwheat, as my stomach is sensitive to oats and it makes it a bit healthier)
9g Salt
125g Olive oil
250g Honey
1 Vanilla pod
Mix all the dry ingredients in a large bowl. Split the vanilla pod and scrape out the seeds; place both the seeds and the pod into a large saucepan along with the olive oil and honey. Bring to a boil and cook thoroughly; the mixture should bubble up and expand to two or three times its original volume. Pour this mixture over the dry ingredients and stir until everything is well combined.
Spread the mixture onto a baking sheet lined with parchment paper (this is important, as the honey hardens upon cooling and sticks easily to the pan). Spread the granola in a fairly thick layer and place in the oven at 150–170°C; stir every ten minutes until it is a beautiful golden brown. This takes about 50 minutes.
Zucchini Jam:
500g Zucchini
400g Sugar
20g Ginger
3 Limes (zest from 1.5 and juice from all 3)
1 Vanilla pod
Start by thinly slicing the zucchini using a mandoline and cutting the ginger into thin strips. Scrape the seeds from the vanilla bean and mix them thoroughly with a portion of the sugar. Combine all the ingredients, adding the grated lime zest and the squeezed lime juice, and stir again.
Let the zucchini rest for a few hours. It should release almost all its liquid, and the sugar should have completely dissolved. Pour the zucchini mixture into a saucepan and boil over high heat for 5–10 minutes.
Then, remove the zucchini and place it in a colander while the liquid continues to boil for another 5–10 minutes, depending on the heat. The liquid should reduce to a syrup of the right consistency. Once the liquid has reached the right consistency, turn off the heat and return the zucchini to the pan, allowing everything to cool together for 30 minutes.
Finally, transfer the jam to a jar and store it in the fridge.
Enjoy the granola with yogurt and the zucchini jam for breakfast, lunch, or dinner. Take care! Talk soon! Ciao, Catharina.
